;e point of a party is for every person, host included, to
enjoy themselves. So when it comes to the main course, opt
for something impressive that doesn’t take a lot of last minute
preparation. For easy cleanup, try one-pot chicken thighs with
a sauce made from reduced drippings, a touch of dry wine (like
sherry or madeira), and a swirl of butter. Toss in veggies and
starches like carrots, parsnips, shallots, and baby potatoes so
you have all of your components in one pot.
Let’s not forget our friend, the always-crowd-pleasing lasagna. ;anks to no-bake pasta sheets, you hardly even have to
use your noodle to whip this masterpiece up. ;e day before
your dinner party, prepare a huge batch of fresh, garlicky marinara and divide it in half. Mix sautéed ground beef and sausage into one batch, and leave the other meat-free. Layer up
two lasagnas: one with grilled veggies and plain marinara, and
the other with the meat sauce. Fill both with herbed, lemony
ricotta, stringy mozzarella, grated Parmesan, and loads of fresh
basil. Cover with tin foil and bake about an hour or two before
guests arrive. Not only will the house smell like a Sicilian grandmother’s kitchen, but you can kick back and enjoy your spiked
cider because the hard part’s already over.
Same rule of keeping it simple goes for dessert. Don’t
overcomplicate things. At this point, your partygoers are
stu;ed with pasta and bourbon, so no need to get fancy on the
;nal course. Keep your apple game strong by slicing the fruit,
tossing it with brown sugar, cinnamon, and cardamom. Wrap
individual packages in tin foil and bake until oozy. Do all of
the above the day before, and reheat the baked apples during
dinner. ;e smell alone with drive everyone crazy, but bring out
the good gelato for a contrast of temperatures.
A ;nal (and quite crucial) tip: minimize the invite list
to people you genuinely like. With a meal this good and
temperature outside so cold, don’t be surprised if your guests
pull up a pillow and stick around for breakfast.
